Recipe: Indian-Style Olive Oil Veggie Sabzi

Ingredients:

  • 2 tablespoons Fragata Extra Virgin Olive Oil

  • 1 cup carrots, chopped

  • 1 cup bell peppers (red, yellow, green), chopped

  • 1 cup broccoli florets

  • 1 cup zucchini or lauki (bottle gourd), chopped

  • 1 teaspoon cumin seeds

  • 1 green chili, chopped (optional)

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • Fresh coriander leaves, chopped (for garnish)

  • A squeeze of lemon juice (optional)

 

Preparation Method:

  1. Prepare the vegetables: Wash and chop all vegetables into bite-sized pieces. Keep them ready.

  2. Heat the oil: Place a large non-stick or stainless steel pan on medium heat. Add 2 tablespoons of Fragata Extra Virgin Olive Oil. Let it warm up slightly.

  3. Add spices: Add 1 teaspoon cumin seeds to the oil. Let them sizzle and release their aroma for a few seconds.

  7. Cook covered: Cover the pan with a lid and let the vegetables cook on low heat for 6 to 8 minutes. Stir occasionally to prevent sticking or burning. The vegetables should be tender yet retain a slight crunch.

  8. Garnish and serve: Turn off the heat. Add freshly chopped coriander leaves and a squeeze of lemon juice if desired. Mix and serve hot.
