  • Juice of ½ lemon

  • ½ teaspoon black pepper

Instructions:

  1. In a saucepan, bring 2 cups of water to a boil.

  2. Add rinsed quinoa and a pinch of salt.

  3. Cover and simmer on low heat for 12 to 15 minutes, until the water is absorbed and quinoa is fluffy.

  4. Remove from heat and let it cool completely.

  1. In a large mixing bowl, combine chopped cucumber, tomato, bell pepper, grated carrot, and coriander.
